  • 4 medium russet potatoes Scrubbed and poked with fork
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup sour cream For topping
  • 2 tablespoons chopped chives For garnish
  • Salt and pepper to taste

Preparation

  • Preheat your air fryer to 400°F (200°C).
  • Scrub the potatoes thoroughly and poke several holes in each potato with a fork.
  • Brush the potatoes with olive oil and season with salt and pepper.

Cooking

  • Place the potatoes in the air fryer and cook for 30 minutes, flipping halfway through.
  • Carefully remove the potatoes and let them cool slightly.
  • Cut each potato in half lengthwise and scoop out a small portion of the flesh, leaving a bit of potato around the edges.
  • Sprinkle shredded cheddar cheese and crumbled bacon into the potato halves.
  • Return the stuffed potato skins to the air fryer and cook for an additional 5-8 minutes, or until the cheese is melted and bubbly.
  • Serve hot, topped with sour cream and chopped chives.
