Authentic Chicken Curry

Ingredients
  

Main Protein

  • 1 kg chicken, cut into pieces Boneless chicken is preferred, but bone-in adds flavor.

Liquids/Dairy

  • 1 cup plain yogurt Avoid low-fat yogurt as it may curdle.

Oils and Fats

  • 2 tablespoons cooking oil

Aromatics & Vegetables

  • 2 onions, finely chopped Sauté until golden for depth of flavor.
  • 2 tomatoes, pureed Use for a smooth sauce.

Seasoning/Spice Blend

  • 2 teaspoons cumin seeds Toast briefly for enhanced flavor.
  • 2 teaspoons coriander powder
  • 1 teaspoon turmeric
  • 1 teaspoon red chili powder Adjust based on heat preference.
  • 1 teaspoon garam masala
  • to taste salt

Optional Ingredients

  • 2-3 slit green chilies Add for heat before serving.
  • to taste fresh cilantro, for garnish Chop before adding.

Instructions
 

Preparation

  • Heat 2 tablespoons of cooking oil in a pot over medium heat. Add cumin seeds and let them sizzle for about 30 seconds until fragrant.
  • Add finely chopped onions to the pot and cook for 5-7 minutes until golden brown.
  • Stir in the pureed tomatoes and cook for another 5 minutes until the mixture thickens and oil separates.
  • Add coriander powder, turmeric, red chili powder, and salt. Cook for 2-3 minutes, stirring constantly.

Cooking

  • Add chicken pieces, stir well to coat in the spice mix. Pour in the yogurt and mix again.
  • Cook for 10-15 minutes until chicken is no longer pink.
  • Cover the pot, reduce heat to low, and let it simmer for 15-20 minutes until chicken is tender.
  • Sprinkle garam masala and stir gently. Cook uncovered for an additional 2-3 minutes. Garnish with fresh cilantro before serving.

Notes

Enhance flavor by marinating chicken in yogurt and spices ahead of time. Customize by adding your favorite vegetables or adjusting spice levels.
