  • 1 pound gnocchi
  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste
  • Chopped chives or green onions for garnish

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving some fat in the pot.
  • Add the diced onion to the pot and sauté until soft, about 3-4 minutes.
  • Stir in the minced garlic and cook for another 1-2 minutes.
  • Pour in the chicken or vegetable broth and bring it to a simmer.
  • Add the gnocchi and cook according to package instructions until tender.
  • Lower the heat and stir in the heavy cream and cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste. Mix in the crispy bacon.
  • Serve hot with chopped chives or green onions as garnish.

Notes

Enhance flavor by adding a pinch of smoked paprika or red pepper flakes. Customize by adding vegetables, like spinach or mushrooms, for extra nutrition. Serve with a side salad for a complete meal.
