  • 2 slices slices cooked and chopped bacon
  • 2 large large eggs Cracked and whisked
  • 1/3 cup shredded cheddar cheese
  • 1 8-inch flour tortilla
  • 1 teaspoon butter Optional for frying
  • Salt and pepper to taste

Preparation

  • In a skillet, cook the bacon until crispy and then chop it into small pieces.
  • In a bowl, crack the eggs and whisk them with salt and pepper.

Cooking

  • Heat a bit of butter in the skillet, then add the egg mixture and scramble until just set.
  • Lay the tortilla flat and spread the scrambled eggs evenly over one half.
  • Add the chopped bacon and top with shredded cheddar cheese.
  • Fold the tortilla over to create a half-moon shape.
  • Cook on each side for about 2-3 minutes until golden and crispy.
  • Remove from heat, slice, and serve warm.

Notes

For serving, cut quesadillas into wedges and serve with salsa or avocado. Enjoy with orange juice or coffee. Suggestions for enhancements include chili powder or sautéed veggies.
