Ingredients

  • 1 pound Boneless Skinless Chicken Thighs Trim any excess fat; boneless skinless chicken breasts can be used as an alternative.

Seasoning/Spice Blend

  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika Can be replaced with smoked paprika.

Liquids/Dairy

  • 1/2 cup Mayonnaise For a lighter version, use Greek yogurt.
  • 1/4 cup Sweet Chili Sauce
  • 1 tablespoon Sriracha Sauce Adjust to taste for spice level.
  • 1 tablespoon Honey Adjust to taste for sweetness.

Aromatics & Vegetables

  • 2 tablespoons Green Onions Chop thinly for garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken thighs dry with paper towels.

Seasoning

  • Mix salt, pepper, and paprika in a bowl.
  • Rub the mixture all over the chicken thighs for even flavor.

Cooking

  • Heat vegetable oil in a large oven-safe pan over medium-high heat until shimmering.
  • Add the chicken thighs to the pan, cooking for about 5 minutes on each side until golden brown.

Sauce Preparation

  • Combine mayonnaise, sweet chili sauce, Sriracha, and honey in a bowl and stir until smooth.

Baking

  • Remove the pan from heat and spread the sauce generously over the chicken thighs.
  • Place the pan in the preheated oven and bake for about 20 minutes until the chicken reaches an internal temperature of 165°F (75°C).

Notes

Use fresh chicken for the best flavor. Customize spice levels and add toppings like roasted peanuts for extra crunch.
