  • 8 slices brioche or challah bread, cut thick
  • 6 slices thick-cut bacon Cook until crispy
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter For cooking the sandwiches
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 1 pinch fine salt

Cooking and Preparation

  • In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.
  • In a bowl, whisk together eggs, milk, vanilla extract, cinnamon, and a pinch of salt.
  • Spread cream cheese on one side of each slice of bread. Layer crispy bacon on top, then place another slice of bread on top to form a sandwich.
  • Soak each sandwich in the egg mixture, allowing them to soak for a few moments.
  • Melt butter in the skillet, then cook the sandwiches until golden brown on both sides.
  • In a small saucepan, combine maple syrup and bourbon over low heat until warmed.
  • Plate the stuffed toast, drizzle with bourbon maple syrup, and enjoy!

Notes

For added flavor, use flavored cream cheese options such as honey or strawberry. Customize with extra toppings like chopped nuts or chocolate drizzle. Serve with a side of scrambled eggs or yogurt for a balanced meal. Storage: Keep leftovers in an airtight container in the refrigerator for up to 3 days. Freezing: Wrap sandwiches tightly in foil and store in the freezer for up to 1 month. To reheat, thaw in the fridge overnight and heat in a skillet.
