Instructions
 

Preparation

  • In a medium saucepan, melt 1 cup of unsalted butter over medium heat and continue to cook until golden brown (about 5-7 minutes), then let it cool slightly.
  • In a large mixing bowl, combine the browned butter, 1 cup of brown sugar, and ½ cup of granulated sugar. Beat until smooth and creamy (about 2 minutes).
  • Beat in 2 large eggs one at a time and then mix in 2 teaspoons of vanilla extract until well combined and fluffy.
  • In a separate bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined.
  • Fold in 1 cup of toffee bits and ½ cup of chocolate chips until evenly distributed.
  • Using a tablespoon, scoop the dough onto a lined baking sheet, leaving 2 inches between each scoop.

Baking

  • Preheat your oven to 350°F (175°C).
  • Bake the cookies for 10-12 minutes or until the edges are golden and centers look slightly underbaked.
  • Remove from the oven and sprinkle a little sea salt on top before allowing them to cool on the tray.

Notes

For deeper flavor, consider toasting the toffee bits. Customize with nuts or dried fruit. Serve with caramel drizzle for an extra treat.
