  • 1/2 cup blue cheese dressing Optional for serving

Preparation

  • Cook the rice according to package instructions until fluffy.
  • In a large skillet, combine the shredded chicken and buffalo sauce. Stir over medium heat for 5 minutes until warmed through and well-coated with sauce.
  • Add the diced vegetables to the skillet and cook for another 3-4 minutes until they soften slightly but remain crunchy.
  • Gently fold in the cooked rice and stir together for 2 minutes to blend the flavors.
  • Season the mixture with salt and pepper to taste.
  • Scoop the mixture into serving bowls, drizzle with blue cheese dressing if desired, and garnish with chopped green onions.
  • Serve immediately and enjoy!
