  • 1 can white beans (cannellini or great northern) Drain and rinse well before use.
  • 1/2 cup buffalo sauce Adjust amount based on heat preference.
  • 8 small corn or flour tortillas Heat in a dry skillet for pliability.

Fresh Toppings

  • 1 avocado (sliced) Slice just before serving for freshness.
  • 1 cup shredded lettuce Chop just before assembling.
  • 1/2 cup diced tomatoes Keep them fresh for crunch.
  • 1/4 cup diced red onion Can substitute with red cabbage.
  • to taste cilantro (for garnish) Add just before serving for best taste.
  • to taste lime wedges (for serving) Freshly squeezed lime juice enhances flavor.

Instructions
 

Preparation

  • Place drained and rinsed white beans in a saucepan over medium heat and cook for about 5 minutes until warmed through.
  • Pour in the buffalo sauce and mix well. Continue to cook for an additional 5 minutes until the mixture is steaming but not boiling.
  • In a separate skillet, heat tortillas over medium heat for about 30 seconds on each side until warm. Keep covered with a cloth to stay warm.

Assembly

  • Spoon the buffalo bean mixture onto each tortilla, leaving room for toppings.
  • Top with sliced avocado, shredded lettuce, diced tomatoes, and red onion according to your preference.
  • Garnish with cilantro and serve with lime wedges on the side.

Notes

For an extra kick, consider adding cumin or paprika to the beans. Customize with additional toppings such as diced cucumber or radish as desired.
