  • 1 lb Andouille sausage Browned and set aside.
  • 3 medium Potatoes Diced.
  • 1 medium Onion Chopped.
  • 1 medium Bell pepper Chopped.
  • 2 stalks Celery Chopped.
  • 2 tbsp Cajun spices Adjust to taste.
  • 1 cup Heavy cream For added creaminess.
  • 1 cup Cheddar cheese Shredded for garnish.
  • to taste Salt Season to taste.
  • to taste Pepper Season to taste.
  • 4 cups Chicken or vegetable broth Use gluten-free as needed.

Cooking

  • In a large pot, brown the andouille sausage over medium heat, then remove and set aside.
  • In the same pot, add chopped onions, bell peppers, and celery to sauté until softened.
  • Add diced potatoes and Cajun spices, stirring to combine.
  • Pour in chicken or vegetable broth and bring to a boil.
  • Lower the heat and let it simmer until potatoes are tender, about 20 minutes.
  • Use a potato masher or immersion blender to achieve desired creaminess.
  • Stir in heavy cream and cooked sausage; let it heat through.
  • Season with salt and pepper to taste.

Notes

Serve hot, garnished with shredded cheddar cheese. Pair with crusty bread or cornbread for dipping. Enhance flavor with fresh herbs or customize with your favorite toppings.
