  • 1 medium Lemon Juice Freshly squeezed.

Instructions
 

Preparation

  • Peel the carrots and cut them into thin matchsticks, about ΒΌ inch thick.
  • Wash the cucumbers thoroughly and slice them thinly using a sharp knife or mandoline.

Mixing

  • In a large bowl, combine the carrots and cucumbers. Toss gently to mix well.
  • Drizzle olive oil and lemon juice over the salad, ensuring every vegetable is coated.
  • Sprinkle with salt and pepper to taste and mix well again.

Garnishing and Serving

  • Chop the fresh parsley finely and scatter it on top of the salad.
  • Serve immediately to enjoy maximum freshness.

Notes
