  • 1 lb ground beef Use lean ground beef for a balanced flavor.
  • 1 chopped onion Enhances flavor.
  • 1 can (15 oz) black beans Drained and rinsed.
  • 1 can (15 oz) corn Drained.
  • 1 can (10 oz) diced tomatoes with green chilies Adds zest.
  • 1 cup cooked rice Can use white or brown rice.
  • 1 cup shredded cheddar cheese Or use Monterey Jack.
  • 1 tablespoon taco seasoning Adjust to taste.
  • salt and pepper To taste.
  • 1/2 cup chopped green bell pepper Optional for added flavor.

Preparation

  • Heat a large skillet over medium heat. Brown the ground beef, breaking it up until fully cooked, about 6-8 minutes.
  • Add the chopped onion and optional green bell pepper to the skillet. Sauté for 3-5 minutes until softened.
  • Stir in the taco seasoning, black beans, and corn. Cook for 2-3 minutes until heated through.
  • Fold in the pre-cooked rice and the diced tomatoes with their juices. Mix well to combine.
  • Reduce heat and sprinkle shredded cheddar cheese on top. Cover to let the cheese melt for about 5 minutes.
  • Preheat the oven to 350°F (175°C). Transfer the mixture to a baking dish and bake for 15-20 minutes until bubbly.
  • Let the casserole cool for a few minutes before serving.

Notes

Customize with your favorite vegetables. Top with fresh cilantro or avocado slices for added freshness.
