Ingredients
  

Main Protein

  • 1 lb ground beef Brown in a skillet until fully cooked.

Aromatics & Vegetables

  • 1 onion, chopped Sauté until translucent.
  • 1 can (15 oz) diced tomatoes Canned for ease.

Liquids/Dairy

  • 2 cups shredded cheese (cheddar or Mexican blend) Add at the end for a cheesy crust.

Optional Ingredients

  • 1 can (15 oz) black beans, drained and rinsed Add for texture and nutrition.
  • 1 can (15 oz) corn, drained Enhances flavor and nutrition.
  • 6 tortillas, cut into strips Use corn or flour tortillas.

Seasoning/Spice Blend

  • 1 tsp chili powder Adds a warm kick.
  • 1 tsp cumin Enhances flavor profile.
  • salt and pepper to taste Adjust per preference.

Instructions
 

Preparation

  • In a large skillet, cook the ground beef over medium heat until browned, about 7-10 minutes. Drain excess fat.
  • Add the chopped onion and continue cooking for about 5 minutes until it softens.
  • Stir in chili powder, cumin, salt, and pepper. Allow the spices to toast for 1-2 minutes.
  • Add the drained black beans, corn, and diced tomatoes. Cook for another 5 minutes.
  • Spoon half of the beef mixture into a casserole dish, layer with tortilla strips, and top with half of the cheese. Repeat layers until all ingredients are used.

Baking

  • Preheat your oven to 350°F (175°C). Bake the casserole for 30 minutes until the cheese is bubbly and golden.
  • Remove it from the oven and let it cool for about 5-10 minutes before serving.

Notes

Customize with vegetables or different meats as desired. Pairs well with tortilla chips.
