  • 1 cup queso sauce You can also use a homemade cheese sauce.
  • 8 pieces flour tortillas Alternatively, corn tortillas can be used, but handle them carefully.
  • 1 cup shredded cheese (cheddar or Monterey Jack) Ensure it melts well; vegan cheese can be used for dairy-free.
  • 1/2 cup diced onions Sautéed before mixing with chicken for depth of flavor.
  • 1/2 cup chopped cilantro Can be omitted for a milder taste.
  • 1 teaspoon cumin Essential for flavor; alternatives include chili powder or taco seasoning.
  • to taste salt and pepper Adjust according to preference.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, add a splash of oil and sauté the diced onions for about 3-4 minutes until softened and translucent.
  • In a bowl, mix the shredded chicken, sautéed onions, cumin, and salt and pepper to taste.
  • Take a tortilla, add a generous amount of the chicken mixture down the center, roll it up tightly, and place it seam-side down in a baking dish. Repeat with all tortillas.
  • Pour the queso sauce evenly over the rolled tortillas, covering them generously.
  • Top with shredded cheese, ensuring it's evenly distributed.
  • Bake for 25-30 minutes or until the cheese is bubbly and golden.

Notes

Enhance flavor with fresh lime juice. Customize with black beans, corn, or jalapeños. Can be served with guacamole, salsa, or Mexican rice. Freezes well for up to 3 months.
