Ingredients
  

Main Protein

  • 4 pieces boneless, skinless chicken breasts Trim any excess fat and pat the chicken dry for better seasoning adherence.

Aromatics & Vegetables

  • 2 pieces bell peppers (sliced) You can use different colored peppers for a more vibrant dish.
  • 1 small onion (thinly sliced, optional)

Seasoning/Spice Blend

  • 2 tablespoons olive oil Drizzle in the baking dish to prevent sticking.
  • 1 teaspoon Italian seasoning A mix of Italian herbs enhances the flavor.
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Liquids/Dairy

  • 1 cup shredded mozzarella cheese Shred fresh for better melting.
  • ¼ cup grated Parmesan cheese Reserve some for sprinkling on top.

Garnish

  • to taste fresh parsley For garnish.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Drizzle olive oil in a baking dish, and spread it around to coat the surface.
  • Rub the chicken breasts with Italian seasoning, garlic powder, paprika, salt, and black pepper.
  • Place the sliced bell peppers and onion around the chicken in the baking dish.

Cooking

  • Bake for 25 minutes uncovered.
  • Sprinkle mozzarella and Parmesan cheese over the chicken and peppers, then return to the oven for an additional 5 minutes.

Serving

  • Once finished, remove from the oven, let it rest for a few minutes, and garnish with fresh parsley.

Notes

Feel free to swap in other vegetables like spinach or mushrooms. This dish can also be grilled or cooked in a slow cooker.
