  • 1 lb ground beef You can use lean ground beef for a healthier option.
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced Russet or Yukon gold potatoes work well.
  • 4 cups chicken broth Low sodium broth can be used.
  • 2 cups shredded cheddar cheese Feel free to mix cheeses for different flavors.
  • 1 cup milk Whole milk is recommended for creaminess.
  • 1 cup heavy cream
  • 1 tbsp olive oil For sautéing.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes.

Cooking

  • Add the ground beef to the pot, breaking it up as it cooks, until browned and fully cooked. Drain excess grease.
  • Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
  • Pour in the milk and heavy cream, stirring to combine, and heat through without boiling.
  • Gradually add the shredded cheddar cheese, stirring constantly until melted and smooth.
  • Season with salt and pepper, and simmer for an additional 5-10 minutes.
  • Ladle into bowls and serve hot, garnished with extra cheese, bacon bits, or green onions if desired.

Notes

Customize with toppings or add other vegetables to suit your taste. This soup freezes well for up to 3 months.
