Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the cooked, diced chicken and sauté for 2-3 minutes until heated through.
  • Add the chicken broth and heavy cream to the pot, bringing it to a gentle simmer.
  • Carefully add the fettuccine pasta to the simmering liquid.
  • Cook uncovered, stirring occasionally, for about 10-12 minutes until the pasta is al dente and the sauce has slightly thickened.
  • Reduce the heat to low and stir in the grated Parmesan cheese.
  • Season with salt and pepper to taste.
  • If the sauce seems too thick, add a bit of reserved pasta water to reach your desired consistency.
  • Remove from heat and transfer to serving plates.
  • Garnish with fresh chopped parsley and serve warm.
