Preparation

  • Start by boiling water in a large pot. Add the rotini pasta and cook it according to the package directions until al dente, which should take about 8-10 minutes.
  • While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the cooked chicken and garlic, cooking until the garlic is fragrant but not brown, about 2 minutes.

Cooking

  • Once the pasta is cooked and drained, add it to the skillet with the chicken and garlic. Stir well to combine everything evenly.
  • Sprinkle the cheddar and Parmesan cheese over the pasta mixture. Stir until the cheeses melt and create a creamy sauce, about 3-4 minutes. Turn off the heat.
  • Season with salt and pepper to taste, allowing the flavors to blend together beautifully. Give it a taste and adjust seasoning as needed.
  • Transfer the cheesy rotini into serving bowls. Garnish with fresh chopped parsley to add a pop of color.

Notes
