  • 2 pounds russet potatoes, peeled and small diced
  • 3-4 tablespoons oil
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef Can substitute for turkey or a meat substitute.
  • 1 packet taco seasoning
  • Water, as directed on taco seasoning packet
  • 8 ounces Mexican shredded cheese

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large pot, boil the diced potatoes for about 10 minutes until tender. Drain and set aside.
  • In the same pot, heat the oil over medium heat. Add the ground beef and cook until browned.
  • Stir in the salt, pepper, garlic powder, onion powder, and taco seasoning. Add water as directed on the seasoning packet. Mix well.
  • Combine the cooked potatoes with the beef mixture until everything is evenly coated.
  • Transfer the mixture to a greased baking dish. Sprinkle the shredded cheese over the top.
  • Bake in the oven for 20-25 minutes or until the cheese is melted and bubbly.
  • Remove from oven and let cool slightly before serving.

Notes

For added flavor, you can add fresh herbs like cilantro or chives. Customize by swapping ground beef for turkey or a meat substitute. Pair with fresh pico de gallo or cooling guacamole.
