Ingredients
  

Main Protein

  • 2 cups cooked, shredded chicken breast Use pre-cooked chicken or rotisserie chicken.

Liquids/Dairy

  • 1/2 cup mayonnaise Traditional or light version can be used.
  • 1 tablespoon fresh lemon juice

Seasoning/Spice Blend

  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Aromatics & Vegetables

  • 1/4 cup chopped celery
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley

Preparation

  • In a large bowl, add 2 cups of shredded chicken, 1/2 cup mayonnaise, 1 tablespoon lemon juice, and 1 teaspoon Dijon mustard.
  • Sprinkle in 1/2 teaspoon salt and 1/4 teaspoon black pepper. Mix everything well until combined.
  • Fold in 1/4 cup chopped celery, 1/4 cup finely chopped red onion, and 1/4 cup chopped parsley for freshness.
  • Taste your salad and adjust the seasoning if needed.
  • For best results, let your salad chill in the fridge for 10 minutes to enhance the flavors.
