  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions
 

Preparation

  • In a large pot, heat a drizzle of oil over medium heat.
  • Add the chopped onion and minced garlic, sautéing until softened.
  • Stir in the chicken breast and cook until browned.

Cooking

  • Pour in the chicken broth, black beans, corn, and diced tomatoes.
  • Add the taco seasoning, salt, and pepper, and stir well.
  • Bring to a boil, then reduce heat and let simmer for 20 minutes.
  • Shred the chicken in the pot using two forks and mix it back in.
  • Serve hot, topping with cheese, sour cream, and cilantro if desired.
