  • 1/2 cup smoked gouda cheese (shredded) Add to mashed potatoes for creaminess.

Preparation

  • Pat the chicken thighs dry with a paper towel. Season them generously with salt and pepper.
  • In a small bowl, mix together honey and chipotle sauce until well combined.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and sear for 5-7 minutes until golden brown.

Cooking Chicken

  • Flip the chicken and pour the chipotle honey glaze over it. Cook for an additional 5 minutes while basting the chicken.
  • Pour chicken broth into the skillet around the chicken, cover, and let simmer for 30 minutes. Check for doneness.

Preparing Mashed Potatoes

  • Boil peeled potatoes until fork-tender (about 20 minutes). Drain and mash with butter and smoked gouda until smooth and creamy. Season to taste.

Serving

  • Once chicken is cooked through, remove from heat and let it rest for a few minutes. Serve the chicken alongside the creamy smoked gouda mashed potatoes.
