Ingredients
  

For the marinade

  • 1 pound flank steak
  • ¼ cup fresh lime juice (about 2 limes)
  • ¼ cup olive oil
  • ¼ cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the bowls

  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 whole avocado, sliced
  • ½ cup red onion, diced
  • ½ cup feta cheese, crumbled (optional)
  • extra to taste cilantro for garnish
  • lime wedges for serving

Instructions
 

Preparation

  • Marinate the steak by combining lime juice, olive oil, cilantro, minced garlic, cumin, chili powder, salt, and pepper in a bowl. Add the flank steak and let it marinate for at least 15 minutes.
  • While the steak is marinating, cook your rice according to package instructions.

Cooking

  • Heat a grill or skillet over medium-high heat. Remove the steak from the marinade and cook for about 5-7 minutes on each side, or until it reaches your desired doneness. Let it rest for a few minutes before slicing.
  • Slice the steak against the grain into thin strips.

Assembly

  • Assemble your bowls by adding a scoop of rice, black beans, corn, cherry tomatoes, avocado, red onion, and sliced steak.
  • Top with feta cheese, extra cilantro, and serve with lime wedges on the side.

Notes

For enhanced flavor, try marinating the steak overnight. Customize toppings with your favorite vegetables or dressings. Consider serving with a side of grilled vegetables for added nutrition.
