  • 2 1/4 teaspoons active dry yeast (1 standard packet) Bloom in warm milk for best results.
  • 1/4 cup granulated sugar Too much sugar can make the dough sticky.
  • 1 large egg At room temperature.
  • 1 large egg yolk
  • 1/4 cup unsalted butter (melted) Be careful not to overheat.
  • 3 cups all-purpose flour (plus more for dusting) Adjust flour amounts based on humidity.
  • 1/2 teaspoon salt

Filling Ingredients

  • 1/4 cup unsalted butter (melted)
  • 1/2 cup packed brown sugar
  • 1 1/2 tablespoons ground cinnamon

Icing Ingredients

  • 4 ounces cream cheese (softened)
  • 2 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

Preparation

  • Warm the milk to 110°F. Stir in the sugar and yeast, then let it sit for 5-10 minutes until foamy.
  • In a mixing bowl, combine the bloomed yeast mixture, melted butter, egg, and egg yolk. Slowly add flour and salt, mixing until a soft dough forms.
  • Transfer the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
  • Place the kneaded dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

Filling and Assembly

  • While the dough rises, mix melted butter, brown sugar, and cinnamon in a bowl.
  • Once the dough has risen, punch it down and roll it out into a rectangle. Spread the cinnamon filling evenly across the dough and roll it tightly into a log.
  • Cut the log into 1-inch pieces and place them in a greased baking dish. Let them rise again for about 30 minutes.

Baking

  • Preheat oven to 350°F. Bake rolls for 15-20 minutes until golden brown.

Notes
