Preparation

  • Begin by boiling a pot of salted water and cook the pasta according to package directions until al dente. Drain and set aside, saving a little pasta water for later.
  • In a large skillet, heat the olive oil over medium heat. Once hot, add the shredded chicken, stirring for about 2-3 minutes until warmed through.
  • Add the frozen mixed vegetables to the skillet and sauté for 3-4 minutes until bright and tender.
  • Sprinkle in garlic powder, onion powder, salt, and pepper. Stir for about 1 minute to release the spices' aroma.

Cooking

  • Pour the chicken broth and heavy cream into the skillet. Bring to a gentle simmer and let thicken slightly for about 5 minutes.
  • Add the cooked pasta to the skillet, stirring to fully coat in the sauce. If too thick, add reserved pasta water for desired consistency.

Finishing Touch

  • Remove from heat and stir in fresh parsley. Let it rest for a minute before serving.

Notes
