  • 3 cups finely chopped green cabbage or kale Brings color and nutrients.
  • 0.5 cup whole milk or cream, warmed Provides richness; can substitute with plant-based milk.
  • 6 tablespoons butter, divided More for serving if desired.
  • 2 stalks green onions, thinly sliced Add color and mild flavor.
  • Salt, to taste Adjust according to preference.
  • Freshly cracked black pepper, to taste Enhances flavor.

Preparation

  • Boil the Potatoes: Place the peeled and chopped Yukon Gold potatoes in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil, then simmer for about 15 minutes until fork-tender.
  • Cook the Bacon: In a skillet over medium heat, cook the diced bacon until crispy, about 5-7 minutes. Remove from heat and set aside, keeping the fat in the pan.
  • Sauté the Greens: In the same skillet with the bacon fat, add the finely chopped cabbage or kale. Sauté for about 3-5 minutes until wilted and tender.
  • Drain and Mash the Potatoes: Once the potatoes are done, drain them and return to the pot. Mash with a potato masher until smooth and creamy.
  • Combine Ingredients: Stir in the sautéed greens and bacon, followed by the warmed milk or cream and 4 tablespoons of butter. Mix until well combined and creamy.
  • Season and Finish: Add salt and freshly cracked black pepper to taste.
  • Serve and Enjoy: Transfer your Colcannon to a serving dish. Drizzle with additional melted butter and sprinkle with sliced green onions.

Notes

For enhanced flavor, add garlic powder or nutmeg. Customize with preferred greens or add-ins.
