  • 4 medium potatoes, peeled and diced Choose firm potatoes for better texture.
  • 1 onion, chopped Can use yellow or white onion.
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 4 cups chicken broth Homemade or store-bought.
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme Fresh thyme can also be used.
  • to taste salt and pepper Adjust to personal preference.
  • for garnish fresh parsley Adds freshness to the dish.

Preparation

  • In a large pot, heat a bit of oil over medium heat.
  • Add the chopped onions, carrots, and celery. Sauté until softened, about 5 minutes.
  • Stir in the garlic, thyme, salt, and pepper. Cook for an additional minute until fragrant.
  • Add the chicken pieces to the pot. Cook until the chicken is lightly browned, about 5-7 minutes.

Cooking

  • Pour in the chicken broth and bring to a simmer.
  • Add the diced potatoes and cook for 25-30 minutes, or until the potatoes and chicken are cooked through and tender.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh parsley.

Notes

For added flavor, include a bay leaf while simmering and remove it before serving. Customize by adding your favorite veggies like peas, corn, or green beans. Serve with a sprinkle of lemon juice for a refreshing twist.
