  • 1 lb corned beef, diced
  • 4 cups cabbage, chopped
  • 2 cups carrots, sliced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 cup beef broth

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced onion and minced garlic. Sauté until the onion is translucent.
  • Stir in the diced corned beef and cook until slightly browned.
  • Add the sliced carrots and chopped cabbage to the skillet. Mix well.
  • Pour in the beef broth and season with black pepper and paprika.
  • Cover and cook for about 20 minutes, stirring occasionally, until the vegetables are tender.
  • Taste and adjust seasonings if needed. Serve hot!

Notes

For an extra zing, add a splash of apple cider vinegar. Customize by swapping in your favorite vegetables, like potatoes or bell peppers.
