  • 1 pound kielbasa, sliced Can substitute with smoky tempeh for vegetarian option.
  • 1 onion, chopped
  • 2 cloves garlic, minced

Broth and Cream

  • 4 cups chicken broth Vegetable broth can be used for a vegetarian version.
  • 1 cup heavy cream

Spices and Seasoning

  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and minced garlic; sauté until soft.
  • Stir in the sliced kielbasa and cook for about 5 minutes until browned.
  • Add the diced potatoes, chicken broth, paprika, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.
  • Stir in the heavy cream and simmer for an additional 5 minutes.
  • Taste and adjust seasoning if necessary. Serve hot.
