  • 1 cup rice Use long grain or jasmine for best results
  • 4 cups chicken broth Low sodium recommended
  • 1 cup heavy cream For creaminess
  • 1 medium onion, diced Enhances flavor
  • 2 cloves garlic, minced Fresh garlic for best taste
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional) For topping
  • to taste Chopped green onions for garnish (optional)

Cooking Steps

  • In a large pot, combine chicken breasts, diced onion, and minced garlic, adding in the chicken broth. Bring to a boil.
  • Once boiling, reduce heat to a simmer and let it cook for about 20 minutes until the chicken is cooked through.
  • Remove the chicken from the pot, shred it, and return it to the pot.
  • Stir in the rice, heavy cream, onion powder, garlic powder, thyme, parsley, salt, and pepper.
  • Allow to simmer for another 10-15 minutes until the rice is tender.
  • Serve hot, topped with shredded cheese and green onions if desired.

Notes

For more flavor, consider adding a splash of lemon juice before serving. Customize with different veggies, like carrots or celery.
