  • 16 oz gnocchi Fresh or frozen
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • ½ cup crispy bacon bits

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Preparation

  • Begin by heating a large skillet over medium heat and add the chicken breasts. Season with salt, pepper, garlic powder, and onion powder. Sear until golden brown on both sides and cooked through, about 6-7 minutes per side.
  • Remove the chicken, let it rest for a few minutes, and then chop it into bite-sized pieces.

Cooking

  • In the same skillet, add the chicken broth and bring to a simmer.
  • Stir in the cream cheese, mixing until creamy.
  • Add the gnocchi and cooked chicken back into the skillet. Mix well.
  • Gently fold in the spinach and allow it to wilt for about 2 minutes.
  • Stir in the cheddar cheese and bacon bits until melted and creamy.
  • Taste and adjust seasoning if necessary. Serve hot!

Notes
