  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (10.75 ounce) condensed cream of mushroom soup
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb gnocchi
  • 1/2 cup shredded cheddar cheese (optional) Can be omitted or substituted with other cheeses

Cooking Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and minced garlic, and sauté until softened.
  • Add the cubed chicken and cook until browned and no longer pink.
  • Pour in the cream of mushroom soup, heavy cream, milk, thyme, salt, and pepper. Stir well to combine.
  • Bring the mixture to a simmer and cook for about 5 minutes.
  • Add the gnocchi and simmer until cooked through, about another 5-8 minutes.
  • If desired, sprinkle shredded cheddar cheese on top and allow it to melt.
  • Serve hot and enjoy!

Notes

Serve with a simple side salad or garlic bread for a complete meal. Store in an airtight container in the refrigerator for up to 3 days. For freezing, place cooled portions in freezer-safe containers; it will keep for up to 2 months.
