  • 1 lb 3-4 boneless, skinless chicken breasts (about 1 lb)
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • ½ cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder

Cooking Steps

  • Cook the gnocchi according to package instructions until they float, then drain and set aside.
  • In a large skillet over medium heat, add the chicken breasts. Season with garlic powder, onion powder, salt, and pepper. Cook until the chicken is no longer pink, about 5-7 minutes per side.
  • Remove the chicken and shred it using two forks, then return it to the skillet.
  • Add the chicken broth and cream cheese to the skillet. Stir well until the cream cheese melts and forms a creamy sauce.
  • Mix in the cooked gnocchi, spinach, cheddar cheese, and bacon bits. Stir until everything is heated through and the spinach is wilted.
  • Taste and adjust seasoning if needed. Serve hot.

Garnish with additional bacon bits and a sprinkle of cheese for a delightful look. Pair with a side salad or garlic bread for a complete meal.
