  • 1 package gnocchi Fresh or frozen gnocchi can be used.
  • 4 cups vegetable broth Use low-sodium if preferred.
  • 1 cup heavy cream Add at the end to keep it creamy.
  • 4 cloves garlic, minced Fresh garlic preferred.
  • 1 small onion, diced
  • 2 cups spinach or kale Use any leafy green you prefer.
  • to taste Salt and pepper Adjust based on preference.
  • 1 tablespoon olive oil For sautéing the onion.
  • to taste Parmesan cheese for serving Grated or shaved, as preferred.

Preparation

  • In a pot, heat olive oil over medium heat and add diced onion. Sauté until soft.
  • Add minced garlic and cook for another minute until fragrant.
  • Pour in the vegetable broth and bring to a simmer.

Cooking

  • Stir in the gnocchi and let cook for about 3-4 minutes until they float.
  • Add the heavy cream and spinach or kale. Stir until the greens are wilted.
  • Season with salt and pepper.
  • Serve hot with Parmesan cheese on top!

Notes

For added flavor, sauté some mushrooms along with the onions. Customize with your favorite veggies, such as zucchini or carrots. Consider garnishing with fresh herbs like basil or parsley for extra freshness.
