  • 2 pounds baby potatoes, washed and halved
  • 2 tablespoons olive oil

  • 3 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley, for garnish
  • Juice of half a lemon

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper.
  • Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until golden and tender.

Cooking

  • In a skillet, melt butter over medium heat and add minced garlic.
  • Sauté the garlic until fragrant, about 1-2 minutes.
  • Add the heavy cream and stir gently.
  • Mix in the Parmesan cheese until melted and smooth.
  • Season the sauce with lemon juice, salt, and pepper to taste.
  • Once the potatoes are done, add them to the skillet and toss to coat in the creamy sauce.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, add sautéed mushrooms or spinach to the sauce. Customize with different herbs like thyme or rosemary. Serve with a side salad for a complete meal.
