Creamy Gnocchi with Sausage

Ingredients
  

For the main dish

  • 16 oz 1 package of gnocchi Fresh or frozen, boil according to package instructions
  • 1 lb Italian sausage Can substitute with turkey or chicken sausage
  • 1 cup heavy cream Can use half-and-half for a lighter option
  • 1 cup chicken or vegetable broth Use low-sodium version if preferred
  • 1 cup fresh spinach Wash well before adding to the pot
  • 1 cup grated Parmesan cheese Add off the heat for best melting
  • 1 tbsp olive oil For browning the sausage
  • 2 cloves garlic, minced Enhances flavor
  • to taste salt and pepper Can add red pepper flakes for heat

Instructions
 

Cooking

  • Heat olive oil over medium heat in a large pot.
  • Add the sausage and cook until browned, about 5-7 minutes.
  • Add minced garlic and stir for about 1 minute until fragrant.
  • Pour in the broth and heavy cream, stir well and deglaze the pot.
  • Add the gnocchi and cook for 2-3 minutes until it floats.
  • Mix in the spinach and Parmesan cheese and stir until spinach wilts and cheese melts, about 3 minutes.
  • Taste and adjust seasonings if necessary, then serve hot.
  • Garnish with extra Parmesan and red pepper flakes if desired.

Notes

For added flavor, consider sautéing mushrooms with the sausage. Vegetarian option: use sautéed mushrooms instead of sausage.
