  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup cauliflower, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish For serving

  • In a large pot, combine the chicken broth and chopped cauliflower. Bring to a boil.
  • Once boiling, reduce heat and let it simmer for about 10 minutes until the cauliflower is tender.
  • Add in the cream cheese, stirring until it melts and blends smoothly.
  • Stir in the shredded chicken, heavy cream, garlic powder, onion powder, salt, and pepper.
  • Let the soup cook for another 5-10 minutes on low heat until heated through.
  • Serve hot, garnished with a sprinkle of chopped green onions.

Notes

For a spicy kick, add some paprika or chili flakes. You can also substitute chicken with turkey for a different flavor profile. Serve with avocado slices for added creaminess.
