Creamy Lemon Chicken Orzo

Ingredients
  

Main Protein

  • 1 lb boneless, skinless chicken breasts Cut into bite-sized pieces.

Starch/Pasta

  • 1 cup orzo pasta Cook according to package instructions.

Seasoning/Spice Blend

  • 2 tbsp Kinder’s Grilled Chicken Seasoning Sprinkle on chicken before cooking.

Liquids/Dairy

  • 1 cup chicken broth or white wine Pour into the pan with lemon juice.
  • 1 cup heavy cream Stir in during the last few minutes.
  • 2 tbsp lemon juice Add to the liquid mixture.

Aromatics & Vegetables

  • 1 small onion, diced Sauté until translucent.
  • 2 cloves garlic, minced Cook with onion.
  • 2 cups baby spinach Add at the end until wilted.

Cheese

  • 1/2 cup grated Parmesan cheese Stir in with spinach.

Optional Finishing Ingredients

  • 2 tbsp fresh parsley, chopped Garnish the dish.
  • 1 slices lemon For garnish.

Fats

  • 2 tbsp olive oil For frying chicken.
  • 1 tbsp butter For additional flavor.

Instructions
 

Sauté the Chicken

  • Heat olive oil in a large skillet over medium heat. Cook the chicken pieces for about 5-7 minutes, or until golden brown and cooked through, stirring occasionally.

Add Aromatics

  • Once the chicken is cooked, add diced onion and minced garlic to the pan. Sauté for 3-4 minutes until the onion is soft and translucent.

Incorporate the Orzo

  • Add the orzo and mix well, ensuring it combines with the chicken and aromatics. Stir for about 1 minute to toast the orzo slightly.

Pour in the Liquids

  • Pour in the chicken broth (or white wine) along with lemon juice. Bring to a boil, then reduce to a simmer. Cover and cook for about 10 minutes or until the orzo is tender, stirring occasionally.

Cream It Up

  • After the orzo is fully cooked, lower the heat and stir in the heavy cream. Cook for an additional 2-3 minutes to combine, allowing the sauce to thicken slightly.

Add Spinach and Cheese

  • Stir in the baby spinach and grated Parmesan cheese. Cook for another 1-2 minutes, just until the spinach wilts.

Serve and Garnish

  • Remove from heat and garnish with fresh parsley and lemon slices. Serve immediately while hot.

Notes

For added flavor, consider sprinkling red pepper flakes or including other vegetables like peas.
