  • 4 pieces small to medium chicken breasts (or 2 large halved)
  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced Adjust according to taste.
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated For topping.
  • 1 cup spinach, chopped (optional) Add for extra nutrition.

Preparation

  • Season the chicken breasts with salt and pepper.

Cooking

  • In a large pan, heat olive oil over medium-high heat and add the chicken. Cook for 6-7 minutes on each side until golden brown and fully cooked. Remove from the pan and set aside.
  • In the same pan, add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the cream and stir.
  • Sprinkle the Italian seasoning (or oregano) into the sauce. Mix well.
  • Add the cooked chicken back into the pan and sprinkle Parmesan cheese on top. Let it simmer for a few minutes until the cheese melts and the sauce thickens.
  • If using spinach, stir it into the sauce until wilted.

Notes

Add a squeeze of lemon juice for brightness. Feel free to add mushrooms or bell peppers to the sauce. Serve with crusty bread for dipping.
