  • 1 cup freshly grated Parmesan cheese
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions
 

Preparation

  • Place the shredded chicken into the crock pot.
  • Add the can of diced tomatoes, chicken broth, garlic powder, Italian seasoning, salt, and pepper. Stir to combine.
  • Cover and cook on low for 3-4 hours, or until chicken is heated through.
  • About 20 minutes before serving, stir in the heavy cream and Parmesan cheese.
  • Mix well until the cheese is melted and the soup is creamy.
  • Serve hot, garnished with chopped parsley.

Notes

Enhance flavor by adding Italian sausage or sautéed onions. For a heartier meal, serve over cooked pasta or rice. Freezing: For longer storage, freeze in portions for up to 3 months. Thaw in the fridge before reheating.
