Ingredients
  

Main Protein

  • 4 pounds beef chuck roast Choose a well-marbled roast for tenderness.

Aromatics & Vegetables

  • 1 onion onion (chopped)
  • 3 cloves garlic (minced) Can sauté for enhanced flavor.
  • 4 carrots carrots (chopped) Cut into even pieces for consistent cooking.
  • 4 potatoes potatoes (chopped) Use larger chunks to maintain texture.

Seasoning/Spice Blend

  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary Fresh herbs can be used for more flavor.

Liquids

  • 2 cups beef broth Low-sodium broth is recommended.
  • 1 tablespoon Worcestershire sauce Adds rich umami flavor.

Instructions
 

Preparation

  • Chop the vegetables and trim the beef.
  • Season the beef chuck roast with salt, pepper, thyme, and rosemary.

Searing (Optional)

  • Sear the beef in a hot pan for 3-4 minutes on each side until browned.

Cooking

  • Layer the chopped onions, garlic, potatoes, and carrots in the crockpot.
  • Place the beef roast on top of the vegetables and pour in the beef broth and Worcestershire sauce.
  • Cook on low for 7 hours.

Serving

  • Remove the beef, let it rest for a few minutes, then slice and serve with vegetables.

Notes

Leftovers can be stored in the refrigerator for up to 3-4 days in an airtight container. Consider freezing in portions for up to 3 months.
