  • 1 lb smoked sausage, sliced (450g)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth (1 liter)
  • 1 cup heavy cream or half-and-half (240ml)
  • 1 cup shredded cheddar cheese (120g)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh chives or green onions, chopped for garnish

Preparation

  • In your crockpot, combine the diced potatoes, sliced sausage, chopped onion, and minced garlic.
  • Pour in the chicken or vegetable broth, and add dried thyme, dried basil, salt, and pepper.
  • Stir the ingredients gently until well mixed.

Cooking

  • Cover and cook on low for 6-8 hours or high for 4 hours, until potatoes are tender.
  • Once cooked, stir in the cream and shredded cheddar cheese until melted and creamy.
  • Taste and adjust seasoning if needed, then serve hot, garnished with fresh chives or green onions.

Notes
