  • 2 large large eggs Whisk lightly before adding to the mixture.
  • 1 cup Medjool dates, pitted and packed Soak in hot water for about 10 minutes to soften.
  • ¼ cup coconut oil, melted Can substitute with butter or vegetable oil.
  • 1 teaspoon vanilla extract Can substitute with almond extract.
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips (optional) Fold in right before pouring the batter.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Soak 1 cup of pitted Medjool dates in ½ cup of hot water for about 10 minutes until soft.
  • In a blender or food processor, combine the soaked dates with ¼ cup melted coconut oil, 2 large eggs, and 1 teaspoon of vanilla extract. Blend until smooth.
  • In a large mixing bowl, mix ½ cup cocoa powder, ½ teaspoon baking powder, and ¼ teaspoon salt. Pour in the blended mixture and stir until just combined.
  • Gently fold in ½ cup dark chocolate chips, if using.

Baking

  • Pour the batter into a greased 8×8-inch baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Allow brownies to cool in the pan for at least 10 minutes before slicing.

Notes

Serve with whipped cream or vanilla ice cream. Customize with nuts or different toppings.
