Ingredients

  • 4 pieces boneless, skinless chicken breasts Pat dry and season with salt and pepper.

  • 2 pounds russet or Yukon Gold potatoes Peel and quarter before boiling.

Seasoning

  • 2 teaspoons dried thyme Classic herb for seasoning chicken.
  • 2 teaspoons dried rosemary Complementary herb for chicken.

Liquids/Dairy

  • ½ cup whole milk Add creaminess to mashed potatoes.
  • 4 tablespoons butter Use in mashed potatoes and glazing carrots.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Pat the chicken breasts dry and season generously with salt, pepper, thyme, and rosemary.

Cooking Chicken

  • Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
  • Once hot, add the seasoned chicken breasts and cook for about 5-7 minutes until golden brown.
  • Add minced garlic to the pan and stir for about 1 minute until fragrant.
  • Transfer the skillet to the oven and roast the chicken for 20 minutes or until fully cooked (internal temperature should reach 165°F).

Cooking Potatoes and Carrots

  • Place the peeled and quartered potatoes in a pot and cover with cold water. Bring to a boil and cook for 15-20 minutes until fork-tender.
  • In a separate pot, add sliced carrots and enough water to cover them. Bring to a boil, then simmer for 10 minutes until tender.
  • Drain the carrots, return them to the pot, add honey and 1 tablespoon of butter for glazing, stirring until nicely coated.

Final Steps

  • Once the potatoes are cooked, drain and return them to the pot. Add 4 tablespoons of butter and ½ cup of milk, mashing until smooth. Season with salt and pepper to taste.

Serving

  • Plate the juicy chicken first, followed by a scoop of creamy mashed potatoes and artistically arranged glazed carrots.
  • Pair with a light white wine or sparkling water.

Notes

Enhance flavor with fresh herbs, customize mashed potatoes with cheese or garlic, and serve with a side salad. Leftovers can be stored in the refrigerator for up to 3 days.
