Ingredients
  

For the Chicken Marinade

  • 4 pieces Chicken breast Skinless and boneless
  • 2 tablespoons Olive oil Extra virgin is preferred
  • 2 cloves Garlic Minced
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1 teaspoon Oregano Dried or fresh
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper Freshly cracked preferred

For the Bowl Assembly

  • 1 cup Cooked quinoa or rice Use brown rice or cauliflower rice for variations
  • 1 cup Cucumber Diced
  • 1 cup Tomatoes Diced
  • 1/2 cup Red onion Thinly sliced
  • 1/2 cup Feta cheese Crumble over the top
  • 1/2 cup Tzatziki sauce Homemade or store-bought

Instructions
 

Preparation

  • Marinate the chicken in olive oil, minced garlic, lemon juice, oregano, salt, and pepper for at least 30 minutes.

Cooking

  • Grill or pan-fry the chicken until cooked through, then slice.

Assembly

  • In a bowl, layer cooked quinoa or rice, fresh veggies (cucumber, tomatoes, red onion), and sliced chicken on top.
  • Crumble feta cheese over the top and drizzle with homemade tzatziki sauce.
  • Serve immediately or meal prep for future meals.

Notes

Add a sprinkle of paprika or cayenne for a little kick. Try swapping in your favorite vegetables, like bell peppers or olives. Perfect for meal prep, these bowls can be enjoyed for lunch throughout the week.
