  • 1 lb lean ground beef (93%)
  • 2 medium sweet potatoes, peeled and diced
  • 1 sliced avocado
  • 1 cup cottage cheese
  • 1 diced yellow onion
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp)
  • 2 tbsp hot honey

Spices

  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cinnamon
  • Salt and pepper, to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper.

Cooking

  • Roast for 40–45 minutes, stirring halfway for even cooking.
  • In a skillet, heat 1 tbsp olive oil over medium heat. Sauté diced onion until soft, about 3–4 minutes.
  • Add ground beef to the skillet, breaking it apart. Cook for 6–8 minutes until browned, stirring in taco seasoning, salt, and pepper.

Assembly

  • Assemble the bowl: place sweet potatoes on the bottom, then add ground beef, avocado slices, and a scoop of cottage cheese.
  • Drizzle hot honey generously over each bowl and add optional garnishes, if desired.
  • Serve immediately and enjoy while warm!

Notes

Enhance flavor with spices like cumin or chili powder. Customization options include swapping sweet potatoes for quinoa or brown rice.
