  • 1 lb chicken breast, diced Use fresh or frozen.
  • 2 pieces sweet potatoes, cubed Ensure they are evenly cubed for consistent cooking.
  • 1 cup rice (brown or white) Rinse before cooking.
  • 2 cups water or chicken broth Broth will add more flavor.

Seasonings and Oil

  • 1 tbsp olive oil For roasting the sweet potatoes.
  • to taste Salt and pepper Adjust according to preference.
  • 1 tsp paprika For added flavor.
  • 1 tsp garlic powder Enhances the taste.

Garnish

  • to taste Fresh parsley Optional, for garnish.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss cubed sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder. Spread them on a baking sheet.

Cooking

  • Bake sweet potatoes for 25-30 minutes, or until tender.
  • Meanwhile, rinse the rice and cook it in water or chicken broth according to package instructions.
  • In a skillet, cook diced chicken over medium heat until no longer pink, seasoning with salt and pepper.

Assembly

  • Once everything is cooked, assemble the bowls by layering rice, chicken, and sweet potatoes.
  • Garnish with fresh parsley if desired. Serve warm and enjoy!

Notes

For a spicy kick, add chili flakes or sriracha. Customize with additional veggies like bell peppers or spinach.
