Ingredients
  

Protein and Vegetables

  • 1 pound Chicken breast Cut into slices after cooking.
  • 2 medium Sweet potatoes Diced and roasted.
  • 2 cups Broccoli Steamed until tender.

Base and Flavor

  • 2 cups Rice Cooked according to package instructions.
  • 1/4 cup Chipotle sauce Drizzled on top.
  • 1 medium Avocado Sliced for topping.

Seasoning

  • 2 tablespoons Olive oil For cooking and roasting.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder

Instructions
 

Preparation

  • Cook rice according to package instructions and set aside.
  • Season chicken breast with olive oil, salt, pepper, garlic powder, and onion powder. Cook in a skillet over medium heat until golden brown and fully cooked. Cut into slices.
  • Dice sweet potatoes, toss with olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for 20-25 minutes until tender.
  • Steam broccoli florets until bright green and tender, about 5 minutes.

Assembly

  • Layer rice, sweet potatoes, broccoli, and sliced chicken in a bowl.
  • Drizzle with chipotle sauce and top with sliced avocado. Serve warm!

Notes

Add fresh herbs like cilantro for a bright finish, or swap broccoli for your favorite green veggies. Top with a squeeze of lime or a dollop of Greek yogurt for added creaminess.
