  • 0.5 teaspoon Salt Can be adjusted for lower sodium.
  • 1 teaspoon Cinnamon Can substitute with pumpkin pie spice.
  • 0.5 teaspoon Nutmeg Store spices in a cool, dark place.

Wet Ingredients

  • 0.5 cups Unsweetened applesauce Can substitute with mashed banana.
  • 0.5 cups Honey or maple syrup Agave nectar is a good substitute.
  • 1/3 cups Vegetable oil Coconut oil can be used but alters flavor.
  • 2 large Eggs Check freshness before using.

Main Ingredients

  • 2 cups Grated carrots Use whole carrots and grate for the best texture.

Optional Ingredients

  • 0.5 cups Raisins Or substitute with dried cranberries.
  • 0.5 cups Walnuts Check for nut allergies.

Frosting

  • 1 cups Ricotta cheese Substitute with cream cheese if desired.
  • 1 teaspoon Vanilla extract Almond extract can be substituted, use only half.
  • 1-2 tablespoons Honey or maple syrup Adjust sweetness according to taste.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a large bowl, whisk together whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, mix applesauce, honey or maple syrup, vegetable oil, and eggs until smooth.
  • Gently fold in the grated carrots and any optional ingredients like raisins or walnuts.
  • Pour the wet mixture into the dry ingredients and mix until just combined.

Baking

  • Transfer the batter to the prepared cake pan and smooth the top.
  • Bake in the preheated oven for 35-40 minutes, or until a toothpick comes out clean.

Frosting

  • While the cake cools, make the frosting by combining ricotta cheese, vanilla extract, and honey or maple syrup until smooth.

Notes

Customize with different nuts, dried fruits, or spices. Can also make muffins or use a slow cooker.
