Quesadilla Ingredients

  • 1 piece low-carb tortilla Use any preferred low-carb tortilla
  • 1/2 cup Greek yogurt Can substitute with sour cream if desired
  • 2 pieces Laughing Cow cheese wedges Add extra cheese if you prefer a cheesier quesadilla
  • 1 cup cooked shredded chicken Pre-cooked or leftover chicken works well
  • 1 tablespoon ranch seasoning Adjust according to taste
  • as needed Cooking spray or oil for the pan For greasing the skillet

Instructions
 

Preparation

  • In a bowl, mix the shredded chicken with Greek yogurt and ranch seasoning.
  • Spread the mixture evenly over half of the low-carb tortilla.
  • Add the Laughing Cow cheese wedges on top.
  • Fold the tortilla in half to cover the filling.

Cooking

  • Heat a non-stick skillet over medium heat and spray with cooking oil.
  • Cook the quesadilla for about 3-4 minutes on each side or until golden brown and the cheese is melted.
  • Remove from the skillet, slice, and serve hot.

Notes

For extra flavor, consider adding jalapeƱos or avocado. You can customize the filling with veggies, shrimp, or turkey based on preference.
